A new food truck will soon be joining Pittsburgh’s ever-increasing mobile scene.
Cousins Maine Lobster Truck is set to start rolling out in Pittsburgh sometime in March. The Los Angeles-based food truck chain, which currently has a little more than a dozen trucks across the country, will be making Pittsburgh a permanent stop.
Jim Matz, who, along with his wife Leslie, will run the business in Pittsburgh, says that they’re working on prepping the truck now, and hope to have it up and running by St. Patrick’s Day.
Cousins Maine Lobster Trucks are known for their fresh lobster rolls, which come Maine-style (served chilled, with a touch of mayo), and Connecticut-style (served warm, with butter and lemon). Matz says that the menu for the Pittsburgh truck will be the same as other Cousins Maine Lobster Trucks, and include will include lobster-forward dishes like Lobster Quesadillas, Lobster Tacos, Lobster Tots, Shrimp Tacos, Lobster Grilled Cheese, and (Maine staple) Whoopie Pies.
The company started in 2012 and got a boost after an appearance on Shark Tank, when Barbara Corcoran invested in the business. Matz, who says that he first reached out to the company about getting his own truck after catching a rerun of their episode, says that the brand is just starting to branch into the Northeast. This will be the first Cousins truck in Pennsylvania.
Matz says that once the truck is running, it will be on the road five or six days a week, and parked at breweries, and festivals.
